Healthy Apple Chicken Sausage Stuffing

Ingredients

  • 12 oz gluten free bread
  • ½ lb chicken sausage
  • 2 Tbsp olive oil
  • ½ cup chopped celery
  • ½ cup chopped onion
  • 2 cloves garlic
  • 1 tsp dried sage
  • 1 tsp dried thyme
  • 1 tsp salt
  • ½ tsp pepper
  • 2 apples peeled and chopped
  • 2 cups chicken broth
  • 2 eggs whisked

Instructions

  1. Preheat the oven to 350°F.
  2. Cut the gluten-free bread into small cubes and place in a large mixing bowl.
  3. Heat one tablespoon of olive oil in a pan.
  4. Remove the casing from the chicken sausage and cook it in the hot pan until fully cooked.
  5. Pour the cooked sausage and drippings over the bread cubes.
  6. In the same pan, heat another tablespoon of olive oil and add the celery and onions, cooking for 4-5 minutes.
  7. Add the minced garlic, sage, thyme, salt, pepper, and chopped apples to the pan and cook for about 5 minutes until the apples begin to soften.
  8. Stir in the chicken broth and combine with the apple mixture, then pour over the bread and sausage.
  9. Add the whisked eggs and mix everything until the bread is completely coated and moist.
  10. Transfer the mixture to a greased 9x13 pan and bake covered for 45 minutes, then uncover for an additional 5-10 minutes until crispy on top.
  11. Serve and enjoy!
