Grain Free Paleo Sausage Sage Stuffing

Instructions
- Preheat the oven to 375°F and roast the chopped sweet potato until soft, about 40 minutes.
- Remove the pork sausage from its casing and brown it in a large pan, then set aside but leave the drippings.
- Sauté the onions, celery, and mushrooms in the sausage drippings.
- In a medium/large casserole dish, combine the sautéed mixture with sweet potatoes, diced apples, craisins, almonds, and fresh sage.
- Add the beaten eggs to the mixture and mix well.
- Bake for 20 minutes at 350°F until golden brown, garnishing with additional sage if desired.
