Grain Free Paleo Sausage Sage Stuffing

Ingredients

  • 1 lb pork sausage
  • 1 medium sweet onion, diced
  • 2 cups diced celery
  • 10 oz baby bella mushrooms
  • 2 cups roasted sweet potato
  • 2 red apples, diced
  • 2 tablespoons fresh sage, chopped
  • ½ teaspoon sea salt
  • 1 teaspoon fresh ground black pepper
  • 2 eggs, beaten
  • 1/8 cup raisins or low sugar craisins
  • 1/8 cup chopped almonds

Instructions

  1. Preheat the oven to 375°F and roast the chopped sweet potato until soft, about 40 minutes.
  2. Remove the pork sausage from its casing and brown it in a large pan, then set aside but leave the drippings.
  3. Sauté the onions, celery, and mushrooms in the sausage drippings.
  4. In a medium/large casserole dish, combine the sautéed mixture with sweet potatoes, diced apples, craisins, almonds, and fresh sage.
  5. Add the beaten eggs to the mixture and mix well.
  6. Bake for 20 minutes at 350°F until golden brown, garnishing with additional sage if desired.
