Paleo Cauliflower Sausage Stuffing

Ingredients

  • ¼ cup olive oil, butter, or ghee
  • 1 medium onion, diced
  • 1 cup celery, chopped
  • 4 cloves garlic, mashed
  • 5 cups cauliflower florets, cut into small pieces
  • 1 pound Italian sausage, mild
  • ¾ teaspoon sea salt
  • 2 teaspoons dried sage
  • ½ teaspoon dried thyme
  • ½ teaspoon dried rosemary
  • ½ cup chicken or vegetable broth
  • ¼ cup parsley, chopped
  • to taste ground black pepper

Instructions

  1. Heat a large pan over medium-high heat and add olive oil, butter, or ghee.
  2. Add onion, celery, and garlic to the pan and cook until the onion is browned and tender, about 7 minutes.
  3. Add Italian sausage and seasonings, breaking down the sausage into small pieces.
  4. Cook the sausage mixture for about 4 minutes until browned.
  5. Reduce heat to medium and stir in cauliflower florets, cooking until they soften, about 10 minutes.
  6. Pour in broth and parsley, stir, then reduce heat to low and cover to simmer for 10-12 minutes until liquid is absorbed.
  7. Remove the cover and add sea salt and pepper to taste.
  8. Serve immediately, garnished with more herbs if desired.
