Instructions
- Preheat the oven to 450°F (232°C) and line a baking sheet with parchment paper.
- In a large bowl, combine the chopped cauliflower, onions, celery, and garlic. Toss with olive oil and seasonings.
- Spread the mixture in a single layer on the lined baking sheet, using two sheets if necessary.
- Roast in the oven for about 15 minutes until the onions are soft and the cauliflower begins to brown.
- Add parsley and pecans to the pan, stir, and roast for another 10-15 minutes until the pecans are toasted and the vegetables are caramelized.
