Keto Cauliflower Stuffing

Ingredients

  • 1 large head Cauliflower (cut into small florets)
  • 1 large Onion (sliced)
  • ¼ cup Celery (chopped thinly)
  • 2 cloves Garlic (minced)
  • ¼ cup Olive oil (or butter or ghee)
  • ½ tsp Poultry seasoning
  • ½ tsp Dried thyme
  • ½ tsp Ground sage
  • 1 tsp Sea salt
  • ¼ tsp Black pepper
  • 2 tbsp Fresh parsley (chopped)
  • ¼ cup Pecans (chopped; omit for nut-free)

Instructions

  1. Preheat the oven to 450°F (232°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine the chopped cauliflower, onions, celery, and garlic. Toss with olive oil and seasonings.
  3. Spread the mixture in a single layer on the lined baking sheet, using two sheets if necessary.
  4. Roast in the oven for about 15 minutes until the onions are soft and the cauliflower begins to brown.
  5. Add parsley and pecans to the pan, stir, and roast for another 10-15 minutes until the pecans are toasted and the vegetables are caramelized.
