Healthy Cauliflower Stuffing

Instructions
- Preheat the oven to 375℉.
- Combine all ingredients except dried fruit and pecans in a greased 9x13-inch baking dish and mix well.
- Cover the baking dish with foil.
- Bake covered for 30 minutes, then remove the foil, stir, and bake for an additional 10-15 minutes until vegetables are tender.
- Taste and season with additional salt and pepper as desired, then stir in dried fruit and toasted pecans just before serving.
