Sausage and Sweet Potato Frittata

Instructions
- Preheat the oven to 400°F and line a baking sheet with parchment paper.
- Cut the sweet potatoes into small cubes, spread them on the baking sheet, drizzle with oil, and season with 1 tsp of sea salt. Bake for 25-30 minutes until tender.
- While the potatoes are baking, heat a large oven-safe skillet over medium heat and cook the sausage until browned, about 7-8 minutes. Remove and set aside.
- Chop the spinach, green onions, and olives.
- In a large bowl, whisk the eggs and add the spinach, green onions, olives, cooked sausage, and 1 tsp each of salt and pepper.
- Once the potatoes are done, lower the oven temperature to 375°F, add the potatoes to the egg mixture, and mix well.
- Pour the egg mixture into the skillet and let it cook for 2-3 minutes until the bottom starts to set.
- Transfer the skillet to the oven and bake for an additional 20-25 minutes until the eggs are fully cooked.
- Remove from the oven, cut into pieces, and serve.
