Sausage and Sweet Potato Frittata

Ingredients

  • 2 medium sweet potatoes, cut into small cubes
  • 1 tbsp avocado oil
  • 1 lb ground breakfast sausage
  • 3 cups spinach, roughly chopped
  • 4 medium green onions, diced
  • 1 can olives, sliced
  • 12 large eggs
  • 2 tsp sea salt, divided
  • 1 tsp ground pepper

Instructions

  1. Preheat the oven to 400°F and line a baking sheet with parchment paper.
  2. Cut the sweet potatoes into small cubes, spread them on the baking sheet, drizzle with oil, and season with 1 tsp of sea salt. Bake for 25-30 minutes until tender.
  3. While the potatoes are baking, heat a large oven-safe skillet over medium heat and cook the sausage until browned, about 7-8 minutes. Remove and set aside.
  4. Chop the spinach, green onions, and olives.
  5. In a large bowl, whisk the eggs and add the spinach, green onions, olives, cooked sausage, and 1 tsp each of salt and pepper.
  6. Once the potatoes are done, lower the oven temperature to 375°F, add the potatoes to the egg mixture, and mix well.
  7. Pour the egg mixture into the skillet and let it cook for 2-3 minutes until the bottom starts to set.
  8. Transfer the skillet to the oven and bake for an additional 20-25 minutes until the eggs are fully cooked.
  9. Remove from the oven, cut into pieces, and serve.
