Instructions
- Prepare the green sauce by blending all ingredients in a food processor and refrigerate.
- Make the empanada dough by mixing flour, salt, and oil, then gradually adding cold water until crumbly. Shape into a disk and refrigerate for 30 minutes.
- Cook the ground beef in a skillet, breaking it apart and adding minced garlic and half of the spice mixture. Cook until fully cooked.
- Remove the beef, leaving drippings in the skillet. Cook the sweet potato with remaining spices until tender, then combine with beef, onion, cilantro, and vinegar.
- Roll out the chilled dough, cut into triangles, and fill with the beef mixture. Seal the edges with water.
- Cook in an air fryer at 400℉ for 3 minutes per side or bake at 400℉ for 10 minutes, flipping halfway through.
