Blood Orange & Avocado Salad

Ingredients

  • ¼ small red onion
  • 4 pieces blood oranges
  • 1 large or 2 small-to-medium ripe avocados
  • 2 tablespoons fresh lime juice
  • to taste flaky sea salt or kosher salt
  • 1 teaspoon nigella seed, black sesame seeds or pepitas
  • ¼ cup fresh cilantro leaves
  • 2 tablespoons extra-virgin olive oil

Instructions

  1. Soak the sliced onion in ice water for 10 to 20 minutes to mellow the flavor.
  2. Layer the orange and avocado slices on a large serving plate.
  3. Drain the onion and tuck it between the orange and avocado slices.
  4. Drizzle the salad with lime juice and sprinkle with salt.
  5. Top with seeds and cilantro, then drizzle olive oil over the salad.
  6. Serve immediately.
