Ingredients

  • 6 pieces blood oranges
  • 1 small red onion
  • 1 large handful fresh mint
  • 1 teaspoon fresh thyme
  • ¼ cup pistachios
  • 2 tablespoons olive oil
  • 1 teaspoon sea salt
  • ½ teaspoon black pepper
  • ½ cup vegan or regular feta (optional)

Instructions

  1. Supreme the blood oranges and squeeze each to remove excess juice.
  2. Add the remaining ingredients to the salad bowl and gently toss.
  3. Enjoy!
