Arugula Walnut Pesto

Instructions
- 1. Lightly brown the unpeeled garlic cloves over medium-high heat for about ten minutes, then peel them once cooled.
- 2. Toast the walnuts over medium-high heat until fragrant, about three to five minutes.
- 3. In a food processor, combine the arugula, salt, walnuts, and all the garlic.
- 4. Pulse the mixture while drizzling in the olive oil.
- 5. Transfer the mixture to a bowl and stir in the Parmesan cheese, freshly ground pepper, and a squeeze of lemon to taste.
