The frosting

powdered xylitol, maple sugar, or unbleached cane sugar

Instructions
- Preheat the oven to 325°F.
- Combine the dry ingredients in a large mixing bowl.
- Add the wet ingredients and mix to form the dough.
- Roll out ⅓ of the dough between two sheets of parchment paper to ¼ inch thickness.
- Cut out star shapes and transfer them to a baking sheet.
- Bake for about 20 minutes until edges are slightly darker.
- Cool completely before removing from the sheet.
- Repeat with the remaining dough.
- Prepare the frosting by mixing the ingredients in a bowl.
- Assemble the gingerbread tree by piping frosting between the layers of cookies.
