Ingredients

The gingerbread cookies

  • 6 tablespoons flax meal
  • 1 teaspoon guar gum
  • ½ teaspoon sea salt
  • ½ teaspoon allspice
  • 4 teaspoons cinnamon
  • 4 teaspoons ginger
  • 2 cups almond flour
  • 1 cup coconut flour
  • 2 teaspoons baking soda
  • 1 cup coconut sugar
  • 1 cup applesauce
  • 2 tablespoons apple cider vinegar
  • 2 teaspoons vanilla extract
  • ½ cup coconut oil or ghee

The frosting

  • 1 cup palm shortening
  • 2 cups powdered xylitol, maple sugar, or unbleached cane sugar
  • 1 tablespoon water

Instructions

  1. Preheat the oven to 325°F.
  2. Combine the dry ingredients in a large mixing bowl.
  3. Add the wet ingredients and mix to form the dough.
  4. Roll out ⅓ of the dough between two sheets of parchment paper to ¼ inch thickness.
  5. Cut out star shapes and transfer them to a baking sheet.
  6. Bake for about 20 minutes until edges are slightly darker.
  7. Cool completely before removing from the sheet.
  8. Repeat with the remaining dough.
  9. Prepare the frosting by mixing the ingredients in a bowl.
  10. Assemble the gingerbread tree by piping frosting between the layers of cookies.
