Lentil Soup with Smoked Sausage

Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, carrots, and celery; cook until softened.
- Add sausage and cook until just browned.
- Stir in garlic and cook briefly.
- Add chicken broth, diced tomatoes, tomato paste, Italian seasoning, lentils, and season with salt and pepper.
- Bring to a simmer and cook until lentils are tender.
- Sprinkle with parsley and serve.
