Lentil and Sausage Stew

Ingredients

  • ½ lb. Italian sausage
  • 1 medium yellow onion
  • 3 medium carrots
  • 4 ribs celery
  • 2 cloves garlic
  • 2 cups brown lentils
  • 6 cups chicken broth
  • ½ tsp cayenne
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • 10 oz. frozen spinach

Instructions

  1. 1. Brown the sausage in a large pot over medium heat, breaking it into pieces.
  2. 2. While the sausage cooks, prepare the vegetables: wash, peel, and slice the carrots; slice the celery; dice the onion; and mince the garlic.
  3. 3. Once the sausage is cooked, add the vegetables to the pot and sauté until the onions are soft.
  4. 4. Add the lentils, cayenne, cumin, smoked paprika, oregano, and chicken broth to the pot.
  5. 5. Cover the pot, increase heat to medium-high, and bring to a boil. Then reduce heat to low and simmer for about 30 minutes until lentils are tender.
  6. 6. Stir in the frozen spinach and cook for an additional 15 minutes.
  7. 7. Serve with a thick slice of crusty bread.
