Lentil and Sausage Stew

Instructions
- 1. Brown the sausage in a large pot over medium heat, breaking it into pieces.
- 2. While the sausage cooks, prepare the vegetables: wash, peel, and slice the carrots; slice the celery; dice the onion; and mince the garlic.
- 3. Once the sausage is cooked, add the vegetables to the pot and sauté until the onions are soft.
- 4. Add the lentils, cayenne, cumin, smoked paprika, oregano, and chicken broth to the pot.
- 5. Cover the pot, increase heat to medium-high, and bring to a boil. Then reduce heat to low and simmer for about 30 minutes until lentils are tender.
- 6. Stir in the frozen spinach and cook for an additional 15 minutes.
- 7. Serve with a thick slice of crusty bread.
