Instructions
- Heat olive oil in a large pot and cook the onion until translucent.
- Add the sausage and cook until browned.
- Stir in the carrots, potatoes, tomatoes, mushrooms, chicken broth, lentils, and seasonings.
- Cover and bring to a boil, then reduce heat and simmer for 20 to 25 minutes until lentils and vegetables are tender.
- Serve warm.
