Fall Harvest Stew

Instructions
- 1. In a large pot, heat the olive oil and cook the sliced sausage until browned, then remove and set aside.
- 2. Add the chopped onion and minced garlic to the pot, cooking over medium heat until the onions are softened.
- 3. Stir in the chopped butternut squash and cook for 8 to 10 minutes.
- 4. Add the remaining ingredients, including the cooked sausage, and simmer for 10 to 15 minutes until the apples and squash are tender.
