Instructions
- Heat a large pot over medium-high heat and add cooking spray and olive oil.
- Sauté onions, carrots, celery, and mushrooms until soft, about 8 minutes.
- Add garlic, Italian seasoning, and black pepper; cook for 30 seconds.
- Pour in chicken broth and add potatoes; bring to a boil, then cover and simmer until tender, about 25-30 minutes.
- Add sliced sausage and kale; stir and simmer for 3 more minutes until heated through.
- Taste and adjust seasoning with salt and pepper as needed.
- Serve with optional parsley and Parmesan cheese.
