Harvest Italian Soup with Sausage

Ingredients

The soup

  • 12 ounces pre-cooked Italian sausage links
  • 2 teaspoons olive oil
  • 1 medium yellow onion, diced
  • 2 large carrots, peeled and thinly sliced
  • 2 large celery ribs, diced
  • 8 ounces cremini mushrooms, sliced
  • 4 cloves garlic, minced
  • 12 ounces small red potatoes, quartered
  • 1 teaspoon dried Italian seasoning
  • ½ teaspoon fine salt
  • ¼ teaspoon black pepper
  • 4 cups chicken broth
  • 3 cups kale, torn into bite-sized pieces

Optional toppings

  • to taste chopped fresh parsley
  • to taste shaved or shredded Parmesan cheese
  • to taste crusty bread

Instructions

  1. Heat a large pot over medium-high heat and add cooking spray and olive oil.
  2. Sauté onions, carrots, celery, and mushrooms until soft, about 8 minutes.
  3. Add garlic, Italian seasoning, and black pepper; cook for 30 seconds.
  4. Pour in chicken broth and add potatoes; bring to a boil, then cover and simmer until tender, about 25-30 minutes.
  5. Add sliced sausage and kale; stir and simmer for 3 more minutes until heated through.
  6. Taste and adjust seasoning with salt and pepper as needed.
  7. Serve with optional parsley and Parmesan cheese.
