Italian Sausage Soup

Instructions
- Heat a Dutch oven or soup pot on medium heat and add the Italian sausage, breaking it down as it cooks.
- Add the diced bacon and cook until both the sausage and bacon are cooked through.
- Remove the sausage and bacon from the pot and drain excess fat, leaving some for flavor.
- Add the onions and garlic to the pot and cook until fragrant.
- Pour in a little broth to deglaze the pot, scraping up any brown bits.
- Sprinkle in the flour and stir to combine, then gradually whisk in the remaining broth.
- Add the potatoes, cooked sausage, bacon, oregano, and season with salt and pepper.
- Bring the mixture to a boil, then reduce heat and let it simmer until the potatoes are tender.
- Remove the lid, stir in the heavy cream and kale, and allow the kale to wilt before serving.
