Ingredients

  • 1 pound ground Italian sausage
  • 4 slices bacon, diced into 1 inch pieces
  • ½ cup diced onions
  • 2-3 cloves minced garlic
  • ¼ cup all-purpose flour
  • 3-4 cups chicken broth
  • 2 pounds russet potatoes, diced into cubes
  • 1 teaspoon dried oregano
  • to taste salt and pepper
  • 1 cup heavy whipping cream
  • 2-3 cups fresh kale or spinach

Instructions

  1. Heat a Dutch oven or soup pot on medium heat and add the Italian sausage, breaking it down as it cooks.
  2. Add the diced bacon and cook until both the sausage and bacon are cooked through.
  3. Remove the sausage and bacon from the pot and drain excess fat, leaving some for flavor.
  4. Add the onions and garlic to the pot and cook until fragrant.
  5. Pour in a little broth to deglaze the pot, scraping up any brown bits.
  6. Sprinkle in the flour and stir to combine, then gradually whisk in the remaining broth.
  7. Add the potatoes, cooked sausage, bacon, oregano, and season with salt and pepper.
  8. Bring the mixture to a boil, then reduce heat and let it simmer until the potatoes are tender.
  9. Remove the lid, stir in the heavy cream and kale, and allow the kale to wilt before serving.
