Instructions
- Heat oil in a large pot over medium-high heat and cook the sausage until browned.
- Add onion, bell peppers, and garlic, cooking until the onion is translucent.
- Stir in the remaining ingredients except for the kale and bring to a boil.
- Reduce heat, cover, and let the soup simmer for about 20 minutes.
- Add the kale and simmer for an additional 10 minutes before serving.
