Sweet Potato, Sausage & Kale Soup

Ingredients

The soup base

  • 2 Tbsp. olive oil
  • 1 pound spicy Italian chicken or turkey sausage, crumbled
  • 1 large white onion, diced
  • 4 cloves garlic, minced
  • 8 cups chicken broth
  • 8 cups peeled and diced sweet potato (about 2 pounds)
  • 1 28 oz. can diced tomatoes
  • 1 cup dried pasta (e.g., orecchiette)
  • 3 cups roughly-chopped kale
  • to taste salt and freshly-cracked black pepper

For garnish

  • to taste freshly-grated Parmesan cheese

Instructions

  1. Heat olive oil in a large stockpot over medium-high heat until shimmering.
  2. Add diced onion and crumbled sausage, cooking for 5-7 minutes until the onion is translucent and the sausage starts to brown.
  3. Stir in minced garlic and cook for an additional 1-2 minutes until fragrant.
  4. Add chicken broth, sweet potatoes, and diced tomatoes, stirring to combine.
  5. Bring the mixture to a boil, then reduce heat to medium-low, cover, and let simmer for 5 minutes.
  6. Stir in the dried pasta and cook for an additional 10-15 minutes or until the pasta is al dente.
  7. Add chopped kale and season the soup with black pepper and additional salt if needed.
  8. Serve warm, garnished with freshly-grated Parmesan cheese.
