Instructions
- Heat olive oil in a large pot over medium-high heat.
- Add onion and sauté for 5 minutes.
- Add sweet potato and sausage, cooking for 3 minutes while tossing occasionally.
- Add garlic and cook for an additional 2-3 minutes.
- Pour in the broth and add the spices, seasoning with salt and pepper.
- Bring to a light boil, then reduce heat to medium-low and cover.
- Simmer until sweet potatoes are nearly tender, about 5-10 minutes.
- Add kale and kidney beans, cooking for another 5 minutes.
- Serve warm.
