Turkey Sausage, Kale and Sweet Potato Soup

Ingredients

The soup base

  • 1 Tbsp olive oil
  • cups chopped yellow onion
  • 1 large sweet potato
  • 13 oz fully cooked turkey sausage
  • 4 cloves garlic
  • 6 cups low-sodium chicken broth

The spices

  • 1 tsp paprika
  • 1 tsp ground cumin
  • ¾ tsp ground coriander
  • ¼ tsp chipotle chili powder
  • to taste salt
  • to taste freshly ground black pepper

The vegetables

  • 4 cups chopped fresh kale
  • 1 14.5 oz can dark red kidney beans

Instructions

  1. Heat olive oil in a large pot over medium-high heat.
  2. Add onion and sauté for 5 minutes.
  3. Add sweet potato and sausage, cooking for 3 minutes while tossing occasionally.
  4. Add garlic and cook for an additional 2-3 minutes.
  5. Pour in the broth and add the spices, seasoning with salt and pepper.
  6. Bring to a light boil, then reduce heat to medium-low and cover.
  7. Simmer until sweet potatoes are nearly tender, about 5-10 minutes.
  8. Add kale and kidney beans, cooking for another 5 minutes.
  9. Serve warm.
