Ingredients

The Bowl

  • cups cooked farro
  • 2 large handfuls chopped lacinato kale
  • 4 figs
  • 1–2 tablespoons crushed toasted walnuts
  • 1–2 ounces goat cheese
  • 1 teaspoon hemp seeds (optional)

Balsamic Maple Mustard Dressing

  • 2 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • 2 teaspoons maple syrup
  • 1 teaspoon whole grain mustard
  • ½ teaspoon kosher salt
  • ¼ teaspoon pepper

Instructions

  1. Whisk together the dressing ingredients in a small bowl.
  2. Divide the cooked farro into two bowls.
  3. Massage the chopped kale with a pinch of salt and a drizzle of olive oil until tender.
  4. Top the farro with the massaged kale, figs, and goat cheese.
