Ingredients

The salad

  • 4 cups shredded lettuce
  • 2 cups shredded red cabbage
  • 2 cups shredded chicken
  • ¾ cup jarred mandarin oranges
  • ½ cup shredded carrot
  • cup sliced green onions
  • ¼ cup sliced almonds

The dressing

  • 2 tablespoons rice wine vinegar
  • 4 tablespoons coconut aminos
  • 1 tablespoon sesame oil
  • 1 tablespoon olive oil
  • 1 clove garlic
  • 1 teaspoon ginger
  • to taste salt

Instructions

  1. Combine the shredded lettuce, red cabbage, chicken, mandarin oranges, carrots, green onions, and almonds in a large bowl.
  2. In a separate small bowl, whisk together the rice wine vinegar, coconut aminos, sesame oil, olive oil, minced garlic, minced ginger, and salt.
  3. Drizzle the dressing over the salad and toss to combine before serving.
