Ingredients

The pasta salad

  • 1 box Barilla Chickpea Rotini
  • ¾ cup cilantro, chopped
  • 1 bunch green onions (green parts only), sliced
  • 1 pint grape tomatoes, chopped
  • 1 piece bell pepper, chopped
  • 1 cup corn

The zesty tahini sauce

  • cup tahini
  • 3 tbsp lime juice
  • ¼ cup water
  • 2 tbsp water
  • ½ tsp garlic powder
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • ¾ tsp fine sea salt
  • to taste freshly ground black pepper

Instructions

  1. Cook the pasta according to package directions until al dente, then drain and refrigerate.
  2. Prepare the tahini sauce by whisking together tahini, lime juice, water, garlic powder, cumin, smoked paprika, salt, and pepper until pourable.
  3. Reserve some cilantro and green onions for topping, then combine the remaining ingredients with the pasta.
  4. Pour the tahini sauce over the pasta salad and mix well, adjusting seasoning as needed.
