Ingredients

The salad

  • 2 cups dry pasta
  • 2 cups corn kernels
  • 15 ounces black beans
  • 1 unit bell pepper
  • 2 unit green onions
  • 1 cup cilantro
  • 1 cup cherry tomatoes
  • 2 tablespoons jalapeno
  • 1 teaspoon ground coriander
  • ½ teaspoon salt
  • 1 unit lime zest

The dressing

  • cup mayo
  • ½ cup plain Greek yogurt
  • ¼ cup fresh lime juice
  • 1 clove garlic
  • ½ cup cilantro
  • 1 unit scallion
  • 1 teaspoon chipotle powder
  • ¼-½ teaspoon salt

Instructions

  1. Boil the pasta according to package directions in salted boiling water.
  2. Grill the corn until lightly charred, then cut it off the cob.
  3. In a bowl, combine the cooked pasta, corn, black beans, bell pepper, green onions, cilantro, cherry tomatoes, jalapeno, coriander, salt, lime zest, and the Chipotle Ranch Dressing.
  4. Adjust seasoning with more chipotle powder, lime juice, and salt to taste.
