Southwest Pasta Salad

Ingredients

The pasta and beans

  • ½ lb bowtie pasta
  • 1 14 oz can black beans

The vegetables

  • 2 medium roma tomatoes
  • 1 large bell pepper (red, yellow, or orange)
  • ½ cup sliced green onions
  • ½ cup frozen corn
  • zest from 2 limes

Optional protein

  • 8 oz diced cooked chicken

The cheese

  • ½ cup Queso Fresco or Cotija Cheese

The dressing

  • 6 Tbs fresh lime juice
  • ¼ C white wine or rice vinegar
  • 4-5 cloves garlic
  • 1 ½ tsp chili powder
  • 1 tsp cumin
  • ½ tsp coriander
  • ½ tsp kosher or sea salt
  • 2 tsp sugar
  • ¾ C canola oil
  • ½ C roughly chopped cilantro

Instructions

  1. 1. Boil the pasta in salted water according to package directions.
  2. 2. While the pasta is cooking, prepare the dressing by zesting the limes and placing the zest in a large salad bowl.
  3. 3. In a blender, combine lime juice, vinegar, garlic, chili powder, cumin, coriander, salt, and sugar; blend until smooth.
  4. 4. With the blender running, slowly add the oil until fully incorporated, then pulse in the cilantro.
  5. 5. Once the pasta is cooked, drain and rinse it with cold water to cool.
  6. 6. In the salad bowl with lime zest, combine the cooled pasta, black beans, tomatoes, bell pepper, green onions, corn, and chicken if using.
  7. 7. Toss everything with the dressing and adjust seasoning with salt and pepper to taste.
  8. 8. For best results, chill the salad for 1 hour before serving.
  9. 9. Right before serving, sprinkle cheese on top and serve with extra lime wedges if desired.
