Ingredients

The cookie dough

  • ½ cup butter, softened to room temperature
  • ½ cup packed light brown sugar
  • ½ cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1⅔ cups all-purpose flour
  • ½ cup natural unsweetened cocoa powder
  • 1 teaspoon baking soda
  • ¼ teaspoon salt

For rolling

  • ½ cup powdered sugar

Instructions

  1. Cream together the butter, brown sugar, and granulated sugar until light and fluffy.
  2. Add the eggs and vanilla, mixing until the batter lightens in color.
  3. In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt, then mix into the batter until combined.
  4. Refrigerate the dough for at least 30 minutes, preferably 1 hour.
  5. Preheat the oven to 350°F and line baking sheets with parchment paper.
  6. Scoop the dough into balls and roll each in powdered sugar before placing on the baking sheets.
  7. Bake for 10-11 minutes until puffed and crackled on top, then cool on the baking sheet for a few minutes before transferring to a cooling rack.
