Chocolate Crinkle Cookies

Ingredients

  • cup cocoa powder
  • ¼ cup cacao powder
  • ¾ cup white sugar
  • ¼ cup brown sugar
  • ¼ cup olive oil
  • 2 pieces flax eggs or regular eggs
  • 1 tbsp vanilla
  • 1 cup all-purpose flour
  • 1⅓ tsp baking powder
  • ½ tsp sea salt
  • 3-4 tbsp icing sugar

Instructions

  1. Combine cocoa powder, cacao powder, sugars, and olive oil in a bowl and mix well.
  2. Add flax eggs or regular eggs and vanilla, stirring until combined.
  3. In a separate bowl, mix flour, baking powder, and salt.
  4. Combine the dry ingredients with the wet ingredients and mix until just combined.
  5. Cover the dough and refrigerate for at least 3 hours or overnight.
  6. Preheat the oven to 350°F and prepare baking sheets with parchment paper.
  7. Roll the dough into 1 tbsp balls and coat them in icing sugar.
  8. Place the balls on the baking sheets, spacing them appropriately.
  9. Bake for 10 minutes and let cool on the baking sheet for 5 minutes before transferring to a rack.
