Ingredients

The cookie dough

  • 1 cup all-purpose flour
  • ½ cup cocoa powder
  • 1 tsp baking powder
  • ¼ tsp salt
  • 2 large eggs
  • cup coconut sugar
  • ½ cup melted coconut oil
  • 1 tsp vanilla extract
  • ½ cup mini chocolate chips

The coating

  • ½ cup powdered sugar

Instructions

  1. 1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. 2. In a medium bowl, mix the flour, cocoa powder, baking powder, and salt.
  3. 3. In a large bowl, whisk together the eggs, coconut sugar, melted coconut oil, and vanilla extract.
  4. 4. Add the dry ingredients to the wet ingredients and stir until well combined, then fold in the chocolate chips.
  5. 5. Chill the dough in the refrigerator for at least 30 minutes.
  6. 6. Roll the chilled dough into balls and then roll them in powdered sugar.
  7. 7. Place the rolled dough on the baking sheet and bake for 12 minutes.
  8. 8. After baking, let them cool before rolling in more powdered sugar.
