Instructions
- 1. Stir together the dry ingredients in a medium mixing bowl and set aside.
- 2. In a large mixing bowl, combine the sugar, oil, and eggs, mixing until fully combined.
- 3. Gradually mix in the dry ingredients until a soft dough forms.
- 4. Cover the bowl and refrigerate the dough for 30 minutes.
- 5. Preheat the oven to 350°F.
- 6. After chilling, scoop dough and roll into ping-pong sized balls.
- 7. Coat the balls in powdered sugar until completely covered.
- 8. Place the cookies on a parchment-lined baking sheet, leaving space between them.
- 9. Bake for 8-10 minutes, then let cool for 5 minutes before transferring to a cooling rack.
