Vegan Mushroom Stew

Ingredients

  • 1 tablespoon grapeseed or olive oil
  • 1 ½ cups chopped yellow onion
  • ½ cup dry pearl barley
  • 2 cloves garlic
  • 1 teaspoon dried thyme
  • 8 ounces button or crimini mushrooms
  • 4 cups mushroom broth
  • 1 tablespoon tomato paste
  • 1 teaspoon balsamic vinegar
  • 1 teaspoon white miso
  • 1 leaf bay leaf
  • ¼ - 1 teaspoon sea salt
  • to taste freshly ground black pepper

Instructions

  1. Heat the oil in a large pot over medium heat and sauté the onion until translucent.
  2. Reduce heat and add barley, garlic, and thyme, sautéing for a few minutes.
  3. Stir in the mushrooms and add broth, tomato paste, vinegar, miso, bay leaf, and salt.
  4. Bring to a boil, then reduce heat, cover, and simmer until the barley is tender.
