Instructions
- Heat the oil in a large pot over medium heat and sauté the onion until translucent.
- Reduce heat and add barley, garlic, and thyme, sautéing for a few minutes.
- Stir in the mushrooms and add broth, tomato paste, vinegar, miso, bay leaf, and salt.
- Bring to a boil, then reduce heat, cover, and simmer until the barley is tender.
