Ingredients

The base

  • 1 medium yellow onion, chopped

  • 4 ounces mushrooms, sliced
  • 1 medium Yukon gold potato, cut into 1-inch chunks

The seasoning

  • 2 tablespoons tamari (gluten-free soy sauce)
  • 1 cup water
  • ½ teaspoon fine sea salt
  • ¼ teaspoon black pepper

Instructions

  1. Heat olive oil in a large skillet and sauté the onion until softened.
  2. Add garlic and mushrooms, stirring until fragrant.
  3. Add potato, tamari, and water, bringing to a boil, then simmer covered until potatoes are fork-tender.
  4. Transfer contents to a blender, add salt and pepper, and blend until smooth.
  5. Adjust seasoning if necessary and serve warm.
