Vegan Mushroom Gravy

Instructions
- Heat olive oil in a large skillet and sauté the onion until softened.
- Add garlic and mushrooms, stirring until fragrant.
- Add potato, tamari, and water, bringing to a boil, then simmer covered until potatoes are fork-tender.
- Transfer contents to a blender, add salt and pepper, and blend until smooth.
- Adjust seasoning if necessary and serve warm.
