Vegan Mushroom Gravy

Ingredients

  • 1 teaspoon extra virgin olive oil
  • ¾ cup diced mushrooms
  • 1 medium clove garlic, minced
  • 2 cups plant-based milk, plain, unsweetened
  • 2 tablespoons all purpose flour
  • 1 pinch salt (optional)
  • 1 pinch black pepper
  • 1 tablespoon reduced sodium soy sauce
  • 2 tablespoons chopped fresh chives (additional for garnish)

Instructions

  1. Heat olive oil over medium heat in a saucepan.
  2. Add mushrooms and garlic and sauté for 3 minutes.
  3. In a small bowl, whisk together plant-based milk, flour, salt (if using), black pepper, and soy sauce until smooth.
  4. Pour the mixture into the saucepan and cook for about 8 minutes, until bubbly and thick.
  5. Stir in chives and serve.
