Instructions
- Heat olive oil or butter in a pan and sauté shallots until soft.
- Add mushrooms and optional white wine, cooking until mushrooms are soft.
- Stir in garlic and smoked paprika, cooking until fragrant.
- Pour in vegetable broth and simmer for 10-12 minutes.
- Prepare the slurry by mixing cornstarch with water or broth until smooth.
- Reduce heat and stir in the slurry, cooking until thickened.
- Season with salt and pepper, garnish with parsley, and serve.
