Ingredients

  • 1 Tablespoon olive oil or butter
  • cup diced shallot or white onion
  • 2 cups sliced cremini or baby portobello mushrooms
  • ¼ cup dry white wine (optional)
  • 2 teaspoons minced garlic
  • ¼ teaspoon smoked paprika
  • 1 Tablespoon tamari
  • 1 ½ – 2 cups vegetable broth
  • 1 Tablespoon cornstarch or arrowroot starch
  • ½ teaspoon kosher salt
  • ½ teaspoon pepper
  • 1 ½ Tablespoons fresh chopped parsley

Instructions

  1. Heat olive oil or butter in a pan and sauté shallots until soft.
  2. Add mushrooms and optional white wine, cooking until mushrooms are soft.
  3. Stir in garlic and smoked paprika, cooking until fragrant.
  4. Pour in vegetable broth and simmer for 10-12 minutes.
  5. Prepare the slurry by mixing cornstarch with water or broth until smooth.
  6. Reduce heat and stir in the slurry, cooking until thickened.
  7. Season with salt and pepper, garnish with parsley, and serve.
