Ingredients

  • 1 tbsp extra virgin olive oil
  • 4 oz mushrooms, finely chopped
  • 2 cups vegetable broth
  • 3 ½ tbsp all purpose flour
  • 1 ½ tbsp soy sauce
  • 2 tbsp nutritional yeast
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • to taste freshly ground black pepper

Instructions

  1. Heat olive oil in a medium pot over medium heat and add mushrooms, cooking until browned.
  2. In a separate measuring cup, whisk together broth and flour until smooth.
  3. Pour the broth mixture into the pot with mushrooms and stir in soy sauce, nutritional yeast, onion powder, garlic powder, and black pepper.
  4. Bring to a gentle boil, then reduce heat and simmer for 10-15 minutes, whisking often until thickened.
  5. For a thicker gravy, mix additional flour with water and stir into the gravy, blending if a smoother texture is desired.
