Instructions
- Preheat the oven to 350°F.

- Add the wet mixture to the dry ingredients and stir until combined.
- Line a 9x5 loaf pan with parchment paper and pour the batter into the pan, spreading it evenly.
- Sprinkle pumpkin seeds on top.
- Bake for 60-75 minutes, testing for doneness with a toothpick.
- Cool for 10-15 minutes before removing from the pan and slicing.
