  • ¼ cup pure maple syrup
  • 1 teaspoon pure vanilla extract
  • up to ½ cup mix-ins (e.g., chocolate chips, chopped nuts, dried fruits)

Instructions

  1. Preheat the oven to 350°F and prepare an 8x4-inch loaf pan.
  2. In a large bowl, mix the dry ingredients: almond flour, salt, baking soda, cinnamon, cloves, and nutmeg.
  3. In another bowl, whisk together the eggs, pumpkin, maple syrup, and vanilla.
  4. Combine the wet and dry ingredients, stirring gently until just mixed. Fold in any desired mix-ins.
  5. Pour the batter into the prepared loaf pan and smooth the top.
  6. Bake for 42 to 48 minutes, or until a toothpick comes out clean.
  7. Cool in the pan for 30 minutes, then transfer to a wire rack to cool completely before slicing.
