Ingredients

Dry ingredients

  • 1 cup cassava flour
  • cup coconut flour
  • ½ tsp baking soda
  • tsp pumpkin pie spice
  • 1 tsp cinnamon
  • a pinch salt

Wet ingredients

  • 4 eggs
  • ½ cup pumpkin puree
  • ¼ cup pure maple syrup
  • 2 tbsp coconut oil or grass-fed butter, melted
  • 1 tsp vanilla

Topping

  • ¼ cup raw pumpkin seeds (pepitas)

Instructions

  1. Preheat the oven to 350°F and prepare a bread pan with parchment paper or grease it.
  2. In a medium bowl, whisk together all the dry ingredients until well mixed.
  3. In a larger bowl, whisk together all the wet ingredients until smooth and creamy.
  4. Gradually combine the dry ingredients into the wet ingredients, mixing until fully incorporated.
  5. Pour the batter into the prepared bread pan and sprinkle the chopped pumpkin seeds on top.
  6. Bake for about 45 minutes, or until a toothpick comes out clean. Allow to cool before slicing and serving.
