Instructions
- 1. Preheat the oven to 350°F and prepare a loaf pan with parchment paper or cooking spray.
- 2. In a large bowl, whisk together the pumpkin puree, eggs, maple syrup, and vanilla until well mixed.
- 3. In another bowl, mix together the almond flour, baking soda, salt, and pumpkin pie spice.
- 4. Add the dry ingredients to the wet ingredients and stir until combined.
- 5. Fold in the chocolate chips.
- 6. Bake for 45-50 minutes or until the center is clean when tested with a toothpick. Cover with aluminum foil if the top browns too quickly.
- 7. Let the bread cool completely before serving.
