Paleo Pumpkin Bread with Chocolate Chips

Ingredients

  • 1 cup canned pumpkin puree
  • ¼ cup pure maple syrup
  • ¼ cup coconut oil, melted
  • 4 large eggs
  • 1 tsp pure vanilla extract
  • 1 cup almond flour
  • ¼ cup coconut flour
  • 1 tsp baking soda
  • ½ tsp baking powder
  • ¼ tsp salt
  • 1 Tbsp pumpkin pie spice
  • 1 tsp ground cinnamon
  • ½ cup chocolate chips
  • cup chopped pecans

Instructions

  1. Preheat the oven to 350ºF and prepare a loaf pan.
  2. In a large bowl, combine all the ingredients and mix until just combined.
  3. Transfer the dough to the prepared pan and sprinkle with additional nuts and chocolate chips if desired.
  4. Bake for 45-60 minutes until the center is firm, checking for doneness.
  5. Allow the bread to cool in the pan for 20-30 minutes before transferring it to a wire rack to cool completely before slicing.
