Easy Paleo Pumpkin Bread

Ingredients

  • 2 cups almond flour
  • ¼ cup tapioca flour
  • ¾ cup pumpkin puree
  • 1 large ripe banana
  • 2 eggs
  • ¼ cup coconut oil or butter
  • 2 tablespoons pumpkin pie spice
  • 1 ½ teaspoons baking soda
  • ¼ teaspoon sea salt
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F.
  2. Line a loaf pan with parchment paper and spray the inside with oil.
  3. In a medium bowl, whisk together the dry ingredients.
  4. Blend the pumpkin, banana, eggs, coconut oil or butter, and vanilla extract until smooth.
  5. Pour the blended mixture into the bowl with the dry ingredients and stir until combined.
  6. Pour the batter into the loaf pan and smooth the top.
  7. Bake for 50-52 minutes or until a toothpick comes out clean.
  8. Let cool before slicing and enjoy.
