Instructions
- Preheat the oven to 180C/350F and line a loaf pan with parchment paper.
- In a small bowl, mix the almond flour, allulose, baking powder, and pumpkin pie spice.
- In a separate bowl, whisk together the pumpkin puree, melted butter, and eggs until smooth.
- Combine the wet and dry ingredients until just mixed.
- Transfer the batter into the lined loaf pan and sprinkle with pumpkin seeds.
- Bake for 40-45 minutes, covering the top with parchment paper halfway through to prevent over-browning.
- Remove from the oven and let it cool in the pan completely before slicing.
