Ingredients

The bread

  • 2 cups almond flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 2 tsp pumpkin pie spice
  • ½ tsp cinnamon
  • ¼ tsp nutmeg
  • ½ tsp salt
  • 4 large eggs, lightly whisked
  • cup pure maple syrup
  • 1 tsp vanilla extract
  • ¾ cup 100% pumpkin puree

The cream cheese glaze

  • 3 oz 1/3-less fat cream cheese
  • 1 Tbsp maple syrup
  • 1-2 Tbsp almond milk, or milk of choice

Instructions

  1. Preheat the oven to 350°F.
  2. In a large bowl, whisk together the almond flour, baking powder, baking soda, pumpkin pie spice, cinnamon, nutmeg, and salt.
  3. In a separate bowl, whisk together the eggs, maple syrup, vanilla extract, and pumpkin puree until well-combined.
  4. Combine the wet ingredients with the dry ingredients, mixing until smooth.
  5. Pour the mixture into a prepared 9x5-inch loaf pan and bake for 45 to 50 minutes, or until a toothpick inserted in the center comes out clean.
  6. Let the bread sit for 5 minutes before removing it from the pan to cool completely on a wire rack.
  7. For the cream cheese glaze, soften the cream cheese in the microwave, then whisk in maple syrup and almond milk until smooth.
  8. Drizzle the glaze over the cooled bread, serve, and enjoy!
