Instructions
- Preheat the oven to 475°F.
- Boil the potatoes in salted water for 5 to 6 minutes until halfway done, then drain and cool.
- Make the marinade by whisking all marinade ingredients together until well combined.
- On a baking sheet lined with parchment paper, place the chicken, blanched potatoes, red bell pepper, and onion.
- Drizzle the marinade over the ingredients and toss to coat evenly.
- Bake in the oven for 15 minutes.
- Add the olives and feta cheese, switch the oven to broil, and cook for another 8 to 10 minutes until browned.
- Serve immediately, garnished with fresh thyme if desired.
