Ingredients

The main ingredients

  • 10 pieces boneless skinless chicken thighs
  • 2 lb tiny new potatoes
  • 1 piece red bell pepper
  • 1 medium onion
  • 1 cup pitted kalamata olives
  • cup cubed feta cheese

The marinade

  • ½ cup extra-virgin olive oil
  • 2 tbsp fresh lemon juice
  • 1 tbsp grated lemon zest
  • 1 tbsp Dijon mustard
  • 1 tbsp dried oregano
  • 1 tbsp garlic powder
  • 1 tbsp dried chives
  • tsp salt
  • 1 tsp onion powder
  • 1 tsp ground black pepper
  • 1 tsp smoked paprika
  • 1 tsp red pepper flakes

Instructions

  1. Preheat the oven to 475°F.
  2. Boil the potatoes in salted water for 5 to 6 minutes until halfway done, then drain and cool.
  3. Make the marinade by whisking all marinade ingredients together until well combined.
  4. On a baking sheet lined with parchment paper, place the chicken, blanched potatoes, red bell pepper, and onion.
  5. Drizzle the marinade over the ingredients and toss to coat evenly.
  6. Bake in the oven for 15 minutes.
  7. Add the olives and feta cheese, switch the oven to broil, and cook for another 8 to 10 minutes until browned.
  8. Serve immediately, garnished with fresh thyme if desired.
