Ingredients

The pasta

  • 8 – 9 oz packaged tortellini

The sauce

  • 1 tablespoon olive oil
  • 4 oz cremini mushroom, sliced
  • 1 tablespoon butter
  • 1 clove garlic, minced
  • cup chicken broth
  • cup heavy whipping cream
  • 1 cup packed baby spinach
  • 2 tablespoons grated Parmesan cheese
  • to taste salt
  • 1 pinch sugar
  • to taste ground black pepper
  • 1 tablespoon parsley leaves, chopped

Instructions

  1. Boil water with olive oil and cook the tortellini according to package instructions, then drain.
  2. In a skillet, melt butter and sauté garlic until aromatic.
  3. Add mushrooms and cook for 1 minute, then pour in chicken broth and cream.
  4. Stir in spinach, Parmesan cheese, salt, sugar, and black pepper.
  5. Combine the cooked tortellini with the mushroom cream sauce, add parsley, and serve immediately.
