Roasted Acorn Squash & Arugula Salad

Instructions
- Preheat the oven to 375°F and roast the acorn squash for 45 minutes until the internal temperature reaches 150°F.
- While the squash is roasting, grill the Italian sausages until they reach an internal temperature of 145°F.
- Combine the dressing ingredients using an immersion blender or whisk.
- Once the squash is cooked, slice them in half lengthwise and scoop out the seeds.
- Place one squash half on each plate as a salad bowl and add arugula, goat cheese, dressing, and chopped sausage.
- Serve immediately.
