Roasted Acorn Squash & Arugula Salad

Ingredients

The salad

  • 2 medium/large acorn squash
  • 1 5oz container goat cheese
  • 4 cups arugula
  • 1 lb Italian sausage links

The dressing

  • 2 tbsp finely chopped mint
  • ½ cup olive oil
  • ¼ cup red wine vinegar
  • to taste salt
  • to taste fresh ground pepper

Instructions

  1. Preheat the oven to 375°F and roast the acorn squash for 45 minutes until the internal temperature reaches 150°F.
  2. While the squash is roasting, grill the Italian sausages until they reach an internal temperature of 145°F.
  3. Combine the dressing ingredients using an immersion blender or whisk.
  4. Once the squash is cooked, slice them in half lengthwise and scoop out the seeds.
  5. Place one squash half on each plate as a salad bowl and add arugula, goat cheese, dressing, and chopped sausage.
  6. Serve immediately.
