Perfect Roasted Acorn Squash

Ingredients

The squash

  • 2 medium acorn squash

The seasoning

  • 1 tablespoon extra-virgin olive oil
  • ¼ teaspoon fine salt

Instructions

  1. 1. Preheat the oven to 400°F and line a baking sheet with parchment paper.
  2. 2. Slice the acorn squash in half from tip to stem and scoop out the seeds.
  3. 3. Place the squash halves cut side up on the baking sheet.
  4. 4. Drizzle olive oil over the squash and sprinkle with salt, rubbing the oil into the cut sides.
  5. 5. Turn the squash cut side down on the baking sheet.
  6. 6. Bake for 30 to 45 minutes until the flesh is easily pierced with a fork.
  7. 7. Add any desired toppings and serve warm.
