Baked Acorn Squash

Ingredients

Savory Version

  • 2 medium acorn squash
  • 2 tablespoons olive oil
  • teaspoon salt
  • to taste pepper
  • ½ teaspoon cajun seasoning

Sweet Version

  • 2 medium acorn squash
  • 2 tablespoons unsalted butter
  • 2 tablespoons brown sugar
  • ¼ teaspoon freshly grated nutmeg
  • ½ teaspoon cinnamon
  • ¼ teaspoon cajun seasoning
  • to taste salt and pepper

Instructions

  1. Preheat the oven to 350°F and prepare a baking sheet with parchment paper and nonstick spray.
  2. Slice the acorn squash in half and scoop out the seeds.
  3. Place the squash cut-side down on a cutting board and slice into 1-1.5 inch slices.
  4. Arrange the slices in a single layer on the baking sheet.
  5. Brush the top of each slice with half of the melted butter and sprinkle with half of the brown sugar and spices.
  6. Bake for about 40 minutes, flipping halfway through and brushing with remaining butter and spices.
  7. Garnish with pecans and additional brown sugar if desired before serving.
