Baked Acorn Squash Slices

Ingredients

The squash

  • 2 pieces acorn squash

The topping

  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons maple syrup
  • cup dark brown sugar
  • ½ cup whole pecans
  • 2 teaspoons kosher salt
  • 1 teaspoon ground black pepper
  • teaspoon cayenne pepper

Instructions

  1. Preheat the oven to 400°F and prepare baking sheets.
  2. Halve, seed, and slice the acorn squash into 1-inch thick crescent slices.
  3. Brush the squash slices with a mixture of olive oil and maple syrup.
  4. Process the brown sugar, pecans, salt, black pepper, and cayenne until finely ground, then sprinkle half over the squash.
  5. Roast the squash for 5 minutes, flip, brush with remaining oil mixture, and top with the remaining brown sugar mixture.
  6. Return to the oven and roast until fork-tender, about 20 more minutes.
