Instructions
- Preheat the oven to 400°F and prepare baking sheets.
- Halve, seed, and slice the acorn squash into 1-inch thick crescent slices.
- Brush the squash slices with a mixture of olive oil and maple syrup.
- Process the brown sugar, pecans, salt, black pepper, and cayenne until finely ground, then sprinkle half over the squash.
- Roast the squash for 5 minutes, flip, brush with remaining oil mixture, and top with the remaining brown sugar mixture.
- Return to the oven and roast until fork-tender, about 20 more minutes.
