Roasted Acorn Squash

Ingredients

The squash

  • 2 medium acorn squash

The seasoning

  • 4 teaspoons extra virgin olive oil
  • ¼ to ½ teaspoon kosher salt
  • 1 ½ tablespoons pure maple syrup or light or dark brown sugar

Instructions

  1. Preheat the oven to 400°F and line a baking sheet with parchment paper.
  2. Slice the acorn squash in half and scoop out the seeds.
  3. Drizzle olive oil over the squash halves and rub it evenly on the flesh.
  4. Sprinkle with salt and drizzle with maple syrup or sprinkle with brown sugar if using.
  5. Place the squash cut-sides up on the baking sheet and roast for 40 minutes until tender.
  6. Let cool for a few minutes and enjoy hot.
