Roasted Acorn Squash

pure maple syrup or light or dark brown sugar
Instructions
- Preheat the oven to 400°F and line a baking sheet with parchment paper.
- Slice the acorn squash in half and scoop out the seeds.
- Drizzle olive oil over the squash halves and rub it evenly on the flesh.
- Sprinkle with salt and drizzle with maple syrup or sprinkle with brown sugar if using.
- Place the squash cut-sides up on the baking sheet and roast for 40 minutes until tender.
- Let cool for a few minutes and enjoy hot.
