Ingredients

The squash

  • 3 acorn squash

The seasonings

  • extra-virgin olive oil
  • maple syrup
  • chopped fresh sage and/or rosemary
  • sea salt
  • freshly ground black pepper

Instructions

  1. Preheat the oven to 425°F and line a baking sheet with parchment paper.
  2. Place the acorn squash halves cut side up on the baking sheet.
  3. Drizzle with olive oil and maple syrup, then sprinkle with salt and pepper, coating the squash with your hands.
  4. Sprinkle sage and/or rosemary into the center of the squash.
  5. Roast until the squash is tender and golden brown around the edges, for 25 to 40 minutes depending on size.
  6. Season to taste and serve.
